Raw Corn Chowder

2.jpg

Ingredients:

1 C fresh corn kernels (you can use frozen)

1 clove garlic

1/4 onion chopped

1/4 red bell pepper chopped

1 carrot peeled

1 tsp psyllium (to thicken)

1tsp cummin

1/8 tsp nutmeg

1 tsp chili powder (I add more) or use half to one fresh jalapeno

1 to 2 TBSP fresh parsley or cilantro

1/2 tsp celtic sea salt

ground pepper to taste

2 C water

Bring 2 cups water almost to a boil.  Add all ingredients to a blender then add water and blend.

Chop and slice carrots, bell peppers, onion and corn, place in a bowl, then serve blended soup over the top.

Notice I do not add oil or any other form of fat.  It is unnecessary, and by not adding those ingredients, it makes this soup a 811 friendly variety!
