So, you can make those changes in your life that you’ve always wanted to make. Contestants will have 60 days to prove their ability to achieve a greater level of health.
Registration will be held on September 8th at 11:30 and 6:30 p.m. Registration will consist of a $90 registration fee, body composition, circumference measurements, a before picture taken upon registration, and the complete rules will be explained.
Final measurements will be taken on November 10th 2011. Judging will be based on four criteria:
1. Change in body composition
2. Change in body circumference
3. Your story. You will write a small 200 word maximum story of your fitness journey
during the three months.
4. Before and after picture
There will be several categories and the winner of each will receive prizes! Results will be announced shortly after the end of the competition. Date of the announcement will be set before the end of the competition.

I used the vegan nacho cheese recipe below. Additionally, I added soy crumbles cooked in taco seasoning, chips (obviously), pico, jalapenos, vegetarian low fat refried beans and I also topped it with my favorite salsa, Fronterea Chipotle Salsa! These were delicious! You could also top with avocado, or guacamole.
I served them on a small salad plate, and was quite content. No need for seconds because I had filled up on lots of healthy raw foods all day long!
This is definitely a treat. And not a staple of our diet. I just want you to see, that you can have in moderation, a controlled amount of healthier “junk food”. This version of nacho’s is definitely healthier than the ones you get at a mexican food restaurant….and they are vegan to boot! :) Which makes them healthier still. I really enjoyed the mixture of flavors. It was something I haven’t experienced in a long time. I was inspired recently when a group of my friends went to the Spiral Dinner in Dallas http://www.spiraldiner.com/. It is a vegan restaurant. My Mom ordered nachos, and they were yummy!
2cups water
1/2cup raw cashews
One 7oz. jar pimentos including liquid
1cup nutritional yeast flakes
2tablespoons arrowroot
1tablespoon fresh lemon juice (I didn’t use lemon)
1½teaspoons salt, or to taste
½teaspoon onion powder
¼teaspoon garlic powder
½teaspoon cumin, heaping
Combine all ingredients except pimentos, and blend until completely smooth. Transfer mixture to a medium saucepan and whisk constantly over medium heat. When it starts to thicken add chopped pimentos and continue wisking until thickened to desired consistency, about 5 to 6 minutes.

1 can organic pinto beans
1 can organic vegetarian refried beans
8 oz Pre made pico de gallo
1/2 cup brown rice
4 tbsp favorite salsa
1/2 a orange, red or yellow bell pepper, chopped
1/2 cup frozen corn defrosted
2 white corn tortillas
1 avocado, made into guacamole
Directions:
Shred lettuce and divide among 4 plates.
Heat beans and rice and salsa
Top lettuce with beans, rice, corn, peppers and pico.
Serve with baked white corn tortilla strips that have been baked in the oven on 450 for 5 minutes.

1 can Muri Glen Fire Roasted Diced Tomatoes
1 can Muri Glen Fire Roasted Crushed Tomatoes
2 cups Vegetable broth
1 TBSP Italian Seasoning
3 tsp Spice World Chopped Garlic
1 tsp Raw Agave Nectar
3 Tbsp Coconut Milk
3/4 cup Cooked Brown Rice
1/2 cup Frozen Corn
Directions:
Add broth and both cans of tomatoes to a blender with italian seasoning and garlic. Blend on low until the desired consistency is reached.
Place in sauce pan and put on stove on low heat. Add corn, rice and agave. When desired temperature is reached add coconut milk and continue to warm.
